The Strawberry Egg-less Cupcake

Moist and Soft - Fluffy and Mouth-watering - A good Tea Snack for your kids. 


Strawberry Egg-less Cake

Preparation Time : 45 minutes 
Serves : 10 numbers

Ingredients 

Strawberry Juice - 3/4 cup 

  1. Fresh Strawberry - 150 grams
  2. Sugar - 3 tablespoons 
  3. Water - 1/2 cup 

Cake Batter 

  1. All purpose flour - 1 and 1/2cups 
  2. Baking soda - 1/2 teaspoon 
  3. Baking powder - 1 teaspoon 
  4. Salt - 1/4 teaspoon 
  5. Melted butter - 100 gms 
  6. Condense milk - 1/2 cup 
  7. Sugar  - 3/4 cup 

Preparation

  1. Firstly, bring the contents for strawberry juice to boil for 10 minutes. Cool it and then blend to obtain a smooth liquid. 
  2. Mix the dry ingredients of cake batter together i.e. flour,salt,baking soda,baking powder. 
  3. Soften the butter using a mixer and add sugar. When soft, slowly add the dry ingredients. Between add the strawberry pulp. Add condense milk and combine well. 
  4. The batter will be pinkish, if the batter is not moist enough, add 2 tbsp of milk and then combine. Pour the mixture to each cups and keep the tray in a preheated oven at 180 degree Celsius. Bake it for 20 mins and the cupcake is ready. 
  5. Pull it out and place it on a wire rack to cool off. 
  6. Do not over mix the batter as it becomes stiff. You can top it with strawberry syrup or castor sugar dust.

Coleslaw Sandwich

A simple and chop-chop dish that can be served as a breakfast munch. It is a cold sandwich. Basically it is the coleslaw salad layered in between slices of bread.

Coleslaw Sandwich

Preparation time: 10 min
Servings: 2 – 3 numbers

Ingredients
  1.  Grated carrot – ½ cup
  2.  Chopped cabbage – ½ cup
  3.   Black pepper – a pinch
  4.   Mayonnaise – 2 tbsps
  5.   Bread slices – 4 numbers

Preparation
  1. Take ingredients 1 – 4 and mix it in a bowl.
  2. Layer it on a bread slice to make a sandwich.
  3. Repeat Step 2 to create more sandwiches.

Easy, healthy and a crunchy breakfast. Enjoy!

The Sicilian Fennel Orange Salad

Sicilian-style salad is more heavily dressed than other green salads. Olive oil blends with the juice from the oranges to create a refreshing vinaigrette. It is a healthy and refreshing salad.


Preparation time: 15 minutes
Servings: 3-4 numbers

Ingredients
    1. Oranges – 2 numbers                                                                                         
    2. Fennel bulb, large sized, thinly sliced – 1 number
    3. Sliced red onion – ½ cup
    4. Fresh mint leaves, roughly chopped – 15 leaves
    5. Pomegranate seeds – 4 tbsps
    6. Orange zest – 1 tsp
    7. Olive oil – 1 tsp
    8. Salt – to taste
    9. Orange juice – 4 tbsps
Preparation
1.      Peel the oranges.
2.      Cut the peeled orange between membranes to release segments.
3.      Toss orange segments, fennel, onion, orange zest and juice and olive oil and in large bowl to coat.
4.      Season salad with salt.
5.      Garnish it with mint leaves and pomegranate seeds.

6.      Transfer salad to platter.

The Masoor Dal curry (Lentil Soup)

Masoor Dal ( Lentil Soup)



The Masoor Dal Curry ( lentil soup) is a delicious vegeterian food which is very healthy. It can be served as a soup or as a curry along with roti/ chapathi/ basmati rice.

Ingredients

1 To pressure cook
  • 3/4 cup masoor dal
  • 1/2 tsp asafoetida powder
  • 1/2 tsp turmeric powder
  • 1/4 tsp fennel seed powdered
  • 1/4 tsp cumin seed powdered
  • 2 cups water
  • to taste salt
2 To Garnish
  • 1 number slitted green chilli pepper
  • 2 numbers chopped tomato
  • 1 tsp chopped ginger
  • 2 tsps chopped garlic
  • 1 number diced onions
  • 2 tsps chopped coriander leaves
  • 1/4 tsp turmeric powder
  • 1/4 tsp ground black pepper
  • 1/2 tsp garam masala
  • 1/4 tsp cumin powder
  • 2 tbsps sunflower oil
  • 2 numbers clove
  • 2 numbers cardamom
  • 1 number cinnamon stick
  • to taste salt
Procedure
  1. Wash the dal . Add the ingredients 1  to pressure cooker. Keep it in medium flame.
  2. After the first whistle, keep for another 8 minutes in low flame. Switch it off and wait until the full pressure is released.
  3. Meanwhile, you can prepare the garnish.
  4. First, put the pan on the stove. Pour oil. When hot, add clove , cardamom, cinnamon, onion, garlic, ginger, chilli.
  5. Saute it until onion turn transparent and soft. Add the Masala mix and stir till the aroma of the masala comes out.
  6. To it add the tomatoes, stir until it is soft and the juices evapourate.
  7. Add a pinch of salt. Note that you have already added salt in pressure cooked ingredients. So add salt accordingly.
  8. To the pressure cooked dal, add the garnish and bring it to boil. Add coriander leaves.
  9. Now it is ready to be served. It goes well with Chapathi/roti/basmati rice.

Chicken Green Salad


A salad is a good filling for your tummy. Give it a try and enjoy.

Ingredients
  • 10 numbers cherry tomato
  • 10 numbers baby carrot
  • 1 number cucumber diced
  • 5 numbers lettuce leaves
  • 2 numbers roasted chicken breasts cubed
  • 1 slice wholemeal bread
  • 1 tbsp of melted butter
  • 1 passionfruit pulp
Procedure
  1. Take the bread slice and cut in small cubes. Drizzle the butter over the bread cubes.
  2. Place in the preheated oven at 180deg C for 10 min. Croutons are ready.
  3. Toss all ingredients together. Mix in the passion fruit pulp to the salad.

Veg Thai Green Curry with Bok Choy

This is a dish cooked in thick coconut gravy. Its a variant of stew. The main ingredient is the green curry paste which enhances the taste.

Veg Thai Green Curry with Bok Choy
Preparation time: 10 minutes
Cooking time: 10 minutes
Serves : 4

Ingredients
  • bunch of bok choy
  • 3 numbers of portobello mushroom
  • 1 potato diced into small
  • 1 tsp light soy sauce
  • 1.5 cups of coconut milk
  • to taste Salt
Green curry paste
  • 1 tbsp chopped ginger
  • 1 tbsp garlic chopped
  • 1 tsp of coriander powder
  • 1/2 tsp of cummin powder
  • 1 onion chopped
  • 2 tbsps lemon juice
  • 1 bunch of coriander leaves
  • 4 deseeded green green chillies

Procedure
  1. Make a paste from the ingredients mentioned under the green curry paste.
  2. Saute the mushrooms and potato in oil. 
  3. Add the paste to it. Then add the soy sauce. Stir it and add the coconut milk.
  4. When the mixture comes to a boil add the bok choy leaves.
  5. Add salt as required and cook until the leaves are wilted off.
  6. Serve hot with cooked jasmine rice.

Pan Grilled Beef with Sage Leaves

This is a simple dish with less ingredients. The aroma and flavour of sage leaves makes the steak mouth - watering.


Pan Grilled Beef with Sage Leaves
Preparation Time : 20 minutes
Serves : 2

Ingredients:

  • Beef Steak Slices - 2 nos.
  • Lime, juiced - 4 tsp.
  • Black Pepper - 4 tsp.
  • Sage Leaves - 12 nos.
  • Worcestershire Sauce - 2 tsp.
  • Red Wine - 4 tsp.
  • Butter - 2 tsp.
  • Sunflower Oil - 2 tsp.
  • Salt to taste

Procedure:

  1. Press the beef steak slice with your fist. Drizzle on one side salt and 1 tsp of pepper and press the beef slice with your fist to ensure that the pepper and salt infuse into beef.
  2. Repeat step 1 for each side of beef. Heat the grill pan and put butter and oil so that the butter won't get burnt. Now place the beef slices on the pan. Place the sage leaves all around the pan for the flavour and aroma to infuse with the oil.
  3. Pick up the sage leaves in less than 2 minutes from the pan and keep it aside for garnishing. Now pour 1 tsp of lime juice on top of the beef. Then turn over the slices and do the same.
  4. After 3 minutes, pour 1 tsp each of Worcestershire sauce on top of the beef. Turn over and do the same. When the beef is almost cooked pour 1 tsp of wine on top of each beef slice and turn over and do the same.
  5. Transfer it to a dish and garnish it with lemon and sage leaves.
